Punch holes in a simple paper bag–the school lunch variety or a heavier small bag from the grocery store–to create the ideal storage for onions, garlic and shallots.
Fold the bag in half lengthwise and use a regular hand-held hole puncher to make holes every inch or so; then fold the bag again and repeat. Place the dry onions, garlic or shallots in the bag and fasten the top with a paper clip. The holes will let just enough air circulate and the paper will absorb excess moisture. You’ll save money by buying in bulk and you’ll save time by having what you need handy and fresh.
