Eggs, bacon and… where were we? Oh, right–all you need is love, plus eggs and bacon and a muffin tin, for the ideal breakfast or on-the-go snack any day of the week.
This is so easy that it doesn’t really qualify as a “recipe.” It’s a bacon hack, plain and simple. Start with some pre-cooked bacon (yes, that’s a thing, and you can find it at Trader Joe’s and other neighborhood grocery stores). Chop the bacon, add a bunch of eggs and maybe some scallions, bits of chicken sausage, leftover pizza… you get the idea. Put your concoction in a muffin tin, and bake for 20 minutes at 375.
You’re good to go.
